The Caspian Sea is the most important habitat for Sturgeons. Even now that due to over-harvesting, trade of these fish is prohibited under the CITES (the Convention on International Trade in Endangered Species of Wild Fauna and Flora), but the Caviar farmed on Caspian coastal farms is still the world’s best Caviar.
In addition, the traditional method of processing Caviar in Iran with mild salinity, has made it an uncompetitive product in global markets. Beluga Sturgeon has the largest Caviar in the Caspian Sea with a delicate, unique and high quality appearance. The large Beluga Caviar has a light gray color, a mild taste and a pleasant creamy aroma.
